The pruning

During the winter months, it seems that there is nothing to do in the vineyards, but during the winter months the pruning of the vines is performed.

It is something crucial, the quality of the future grapes will depend of this.

If it is a young vine, it will be held the "pruning latency" thus will guide the vine.

The farmer will decide how and what branches will be pruned. Pruning is done to reduce the aging of the plant, regulating the production and improving the final production.

Each strain produces a variable number of buds, if all are allowed to grow, the quality would be very weak. Every Apellation of Origin will decide how many buds can be left.
